Because both types of cookware use a ceramic/metal combination, they have similar characteristics that are worth nothing:

Because both brands use the same material for their cooking surface, both are chemical free and non-stick, making them a good choice for people trying to leave Teflon behind.

This also means that you should take similar precautions when it comes to using them, as they have similar requirements:

Use: When cooking with ceramic, you should never use metal utensils. Stick to silicone or wood whenever possible, as metal will scratch the surface.
Cleaning: While both brands are advertised as being dishwasher safe, it’s recommended to hand-wash whenever possible, as dishwasher soap is often abrasive and ceramic should be washed with mild soap.

Copper is regarded as the best material when it comes to conductivity, to the point where this material is also used to conduct electricity, something that can’t be said about titanium.

Because of this, copper reacts much faster to temperature changes, something that will show when you’re cooking.

That said, titanium is also a good heat conductor. It just isn’t as good as copper.

Sturdiness

Copper is a soft metal, even if it sounds as a contradiction. It can be easily bent and dented, which means that Copper Chef pans reflect outside damage faster than Gotham Steel.

Titanium is known for being one of the sturdiest cookware materials out there, making it the obvious choice for people who are looking-for cookware that can take a beating.

Note: This only applies to the outside of the pans. Since both brands use ceramic as a cooking surface, both are equally vulnerable on the inside.

The sturdiness also applies to the handles. While both Copper Chef and Gotham Steel have sturdy and solid feeling handles, Gotham Steel’s feel more reliable and safer to use.

Weight

As you can imagine after reading the previous point, copper and titanium have very different weights.

Copper is more lightweight and easier to handle, even when coupled with the ceramic interior. This means that, while not weightless, this brand is better suited for people who aren’t keen on using super heavy pans.

Titanium is much heavier than copper, and coupled with the ceramic interior, these pans are heavy and will put a strain on your wrist if you aren’t used to heavy cookware. That said, this will keep the pans from moving around when cooking, making them a good choice for people who enjoy a solid feel when cooking.

Heat Resistance

While both brands are oven safe, Copper Chef pans have a much higher resistance to heat than Gotham Steel.

Gotham Steel can withstand temperatures up to 500 degrees, while Copper Chef can go all the way up to 850 degrees, making the winner obvious, at least in this category.

Note: This temperature only applies to the body of the pans, not necessarily to the lids. Check those for individual max temperatures to avoid getting a nasty surprise.

While personal preference matters a lot. In this particular case we’re going to have to give the price to Chef Copper.

Don’t get us wrong, Gotham Steel pans are fantastic, but we find that, while the extra weight does add to the sturdiness, it doesn’t help with the cooking, both because it doesn’t react as fast to temperature changes as copper and because the pans are harder to handle.

Price wise, Copper Chef does tend to be more expensive, but we feel the price is worth it considering what you get in return.

The only case in which we’d recommend Gotham Steel over Copper Chef is when you’re in need of very sturdy cookware that don’t require a lot of special care or considerations. Otherwise we highly encourage you to get Copper Chef instead.
